Sumahan on the Water boutique hotel is a rare example of thoughtful and historical transformation in Istanbul. The 5 star hotel is a restored nineteenth century Ottoman distillery, where the high proof ingredient was produced for Rakı, the famous Ottoman tipple. Suma is the word for unadulterated spirit and Han was the word for inn in Ottoman times - hence the unique name, Sumahan on the Water.
